An Everyday Kale Smoothie that Actually Tastes Good!

Alright. As promised, I've got a green smoothie recipe I think even non-"health food" lovers will enjoy!


(Sorry it took me so long. Health food is hard to photograph, guys. It took me three tries to get these shots!)

This awesome smoothie is my breakfast 5/6 days a week through the warm months. Here in Arizona, that's about 6-9 months out of the year...

Quite by accident, this evolved into a vegan recipe because I prefer the way my digestive system handles plant-based protein powder over animal- based. This is the one I like. I had been getting it at Costco but Wal-Mart just starting carrying it for about 5 bucks less, so I'm pretty stoked.


But of course your favorite protein powder will work just fine.

One thing I have figured out after about 4 months of experimenting with veggie smoothies is that in order to make a smoothie taste good and avoid a bitter, leafy taste, you've got to add fat. The good fat, of course.

If you give this recipe a try, whatever you do, do NOT leave out the fat. Because of the creamy texture and high fat content I like to use a large avocado.

Aside from the fact that there is no chopping or peeling required,  the best thing about this smoothie recipe is that it makes two servings. Two! 


That means I only have to make my breakfast every other day! Moms and dads everywhere know just how much time and chaos that can save. I can drink my breakfast while I help search for that missing shoe (Hint: it's behind the shoe basket. Just like it was yesterday. Because you kicked it off there instead of setting it inside the basket.) or while I get dressed, or comb the kids' hair, or sneak a quick browse through my Pinterest feed. I know I can't be the only one who procrastinates that way...

Whatever your motivation, I hope you give it a go. Green smoothies are the ultimate healthy breakfast. They're quick and you can grab them on your way out the door. They fill you up without weighing you down. And they energize you properly because they feed your cells exactly what they need. Not that I am advocating skipping your daily caffeine fix, mind you. That would be crazy talk. I still start every morning with my Vanilla Flavored Coffee and follow it up with this awesome recipe.

Kale Smoothie


3 cups water

2-3 cups (hand-fulls) spinach

1 bunch kale

1 scoop of protein powder (or two if you want a full scoop per serving)

1 large avocado

2 tablespoons chia seeds (optional)

Other optional mix-ins you may like, especially if you are new to green smoothies:

one banana, a handful of frozen fruit such as strawberries, pineapple, peaches, or one apple


a salad spinner (not essential, but a big time saver)

2 blender bottles (or 28oz cups)

a high quality blender (if you can't stomach the cost of a Vitamix, I hear The Ninja is a great budget friendly option)

a spoon and knife


1. De-stem the kale and tear it into small pieces. Rinse it well and give it a spin in the salad spinner.


2. Meanwhile, combine the water, protein powder, spinach, and chia seeds in the blender. Mix until combined. You'll still be able to see the chia seeds but don't worry, you won't be able to taste them. As the chia seeds sit in the liquid they actually form a bit of a gooey texture that helps keep the smoothie from separating.


3. Slice around the long way of the avocado and then split the side that has the pit in half again.


4. Use that spoon to scoop the avocado into the blender. 


5. Pile in that clean kale on top of it. 


6. Mix until completely combined.


7. Now pour it into those blender bottles. I like to pop one in the freezer (to get the chill back so I can drink it right away) and one in the fridge (for tomorrow) while I clean out the blender.


8. Pop a straw in there and be on your way.


So, what does a healthy smoothie like this run ya?

That's just $2.16 per smoothie. Pretty good for an entire meal! And a healthy one at that.
